First of all: You need a bootloader which is booting from USB. Or you will have to deal with the Serial-Connection fun. (see http://www.pogoplugged.com/forum/thread/13088/Pink-brick-d/?highlight=serial+... for that).
But as long as you don't mount the NAND in read mode nothing really bad can happen.

I got in on the Buy.com $50 deal and foud out my new baby is NOT like the rest
. Being new to the Linux front, but not afraid to play-around, I was hoping someone would have some steps to do a complete backup (NAND and current file system) before I hose myself

Depends on the level of Brick.
If you screwed up mtd0 or mtd1 part that contains the uboot, you're boned without a JTAG.
If uboot is still intact, then you've got a shot with the serial cable.

Ethernet looks 1/2 way decent (lights, no ping); but no LED (no blinkey). These B01 appear to be PRO boards? (have SATA header) and a 4 pin (looks like the old audio cable).
cable should be here by end of week and I have a few old audio cables in the garage. Is there something I can try in the interim?
The B01/B02/B03/B04 are all the same board as the P21 (ceboardver PPV3) which is the the Pro/Video board, minus all PCIe circuitry
