I'll try to address at least somewhat your listed concerns.
1) Taking a long time to transcode videos.
Realize that the Pogoplug is a low cost/low power computer which is all you need for sharing files over a network. Transcoding videos can take even powerful computers quite a while to do unless they have specialized video transcoding hardware to speed the process. The Pogoplug's ability to transcode video is just icing on the cake of it's original designed purpose. Be patient if it takes a week then who cares? Once it's done it's done.
2) Is it possible to view videos that aren't transcoded?
The videos are transcoded so they can be streamed over slower mobile networks. I don't have a PS3 so I can't comment on that. But as far as I know they do need to be transcoded. Perhaps someone else can shed more light on the subject than I'm able to do.
3) Apple iPhoto Library issues.
Apple's iPhoto Library is a proprietary application and organizes the photos in its own way and keeps info about them such as albums in its own proprietary database. To expect the Pogoplug to make sense of that is not realistic. However, I do agree that the ability for it to do this would be a great feature to add.
I'd also request the ability to make sense out of the iTunes Library as well and present it in an organized fashion including playlists.
